Ingredients

  • 3 sticks unsalted butter, softened
  • 1 C sugar
  • 1 t vanilla extract
  • 3 1/2 C all-purpose flour
  • 1/4 t salt
  • 1 egg beaten with 1 tablespoon water, for egg wash
  • 1/2 C pecans, very finely chopped 
  • raspberry and/or apricot jam/preserves

Directions

  1. Preheat the oven to 350 degrees F.
  2. With an electric hand mixer, cream together the butter and sugar until they are just combined and then mix in the vanilla.
  3. In a separate bowl, sift together flour and salt.  Add flour mixture into butter mixture and blend until the dough starts to come together. Dump on a floured board and form two balls. Wrap each in plastic and chill for 30 minutes.
  4. Form the chilled dough into 1 1/4-inch balls. Dip each ball into the egg wash and then roll it in the pecans. Place the balls on a parchment paper covered cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the cookies begin to turn golden brown. Cool and serve.
