1 lb boneless skinless chicken breasts
1/2 t salt
1/4 t pepper
1 T unsalted butter
1 T olive oil
1 C chicken broth
1 T lemon juice
1 t lemon zest (or approx. the zest of one medium lemon)
1 t salt
Between two pieces of plastic wrap, pound the Chicken Breasts flat until they are very thin (approx. 1/8" thick). Sprinkle 1 t Salt and 1/4 t Pepper over both sides of all of the Chicken.
In a fry pan over medium heat, melt butter and heat oil. Cook the Chicken until lightly browned and cooked through. Remove Chicken from pan.
Add Chicken Broth to pan and scrape pan to de-glaze. Allow to simmer for 5 - 10 minutes to reduce.
Remove from heat, and stir in Lemon Juice, Zest, and remaining Salt. Pour sauce over Chicken and serve.
